Pumpkin Bread     r01

Because everyone so far seems to love this, once it gets cooler and more people feel like baking this is something great to start with.

Ingredients:
2 cups of fresh cooked pumpkin OR 16 ounces of canned pumpkin
3.5 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons sugar
2 teaspoons cinnamon
1 1/2 teaspoon salt
1 1/2 cups sugar (I use raw cane for flavor and texture)
1/2 teaspoon allspice
4 Tablespoons flax meal (can be purchased just about anywhere, sometimes in bulk like at Winco)
12 Tablespoons water (to compliment the flax meal as the egg replacer, works perfectly)
1 Cup vegetable or other preferred cooking oil
1/2 Cup water if you are using fresh pumpkin OR 2/3 Cup water if you are using canned pumpkin
Any raisins or nuts such as pecans or walnuts you may want to add.

To Make:
     Mix all the dry ingredients together in a separate bowl from the wet ingredients (You may mix the flax in with the water, oil, and pumpkin if you like).
     Mix the wet ingredients into the dry mixture and mix well but do not beat too much or the mixture can become tough and difficult to pour.
     Mix in any other ingredients you would like such as raisins or nuts (both walnuts and raisins worked well when I tried them).
     This amount will make 2 loaves or you can pour it into cupcake pans.
     Bake at 350 F for 1 hour and 15 minutes. Let cool and enjoy!



Candied Plantains    r02


Ingredients:
A Plantain (turning yellow works best as they get sweeter the more yellow they are)
Cooking oil (olive or canola)
Cane Sugar

To Make:
     The easiest way to peel the plantains as I've experienced is to slice along the seams long ways and then peel each long peice to the side around the plantain. Then you can slice up into rings as in the picture or diagonal slices. Heat up enough oil to cover the slices up to their sides and dissolve some sugar into it. Just a couple teaspoons would do since the fruit is already somewhat sweet. Then fry up starting on low heat to cook them through, then on medium heat flipping them every couple of minutes so they don't burn as some peices did in the picture above...
     If you want them crispier keep them on medium heat until they turn slightly brown, and if you want them softer continue cooking them on a lower setting.
     They are done when you can easily cut through them with a spatula.


Grilled Zucchini Mushroom Sandwich     r03



Ingredients:
Hummus (homemade garlic or store bought works great)
Basalmic Vinegar
Cooking Oil
Kaiser Roll, or your favorit bread
Large Tomato
Zucchini
Sliced Portobello Mushroom

To Make:
     Slice the tomato and zucchini into thick slices. Heat up some Basalmic Vinegar with a small amount of cooking oil in a skillet and lightly grill the zucchini and mushrooms.
     Slice bread if needed and spread hummus on both sides, stack the mushrooms zucchini and tomato onto the sandwich and enjoy. It is very simple and quick but tastes amazing and is very healthy.
